Elisabeth and Cake

Here is Elisabeth with her prize winning Chocolate Chip Pound Cake Surprise. She won First Place in the Youth Pound Cake Division and the Award of Excelence at the 2007 Georgia State Fair.

Chocolate Chip Pound Cake Surprise

 

2 sticks butter, softened
1/2 cup shortening
3 cups sugar
6 eggs
1 cup milk
1/2 tsp. baking powder
1/2 tsp. salt
4 Tbs. cocoa
1 Tbs. vanilla
3 cups all-purpose flour
1 cup (or more) chocolate chips
1 cup toasted pecan, chopped

Cream butter, shortening, and sugar. Add eggs, one at a time, beating well after each addition. Sift dry ingredients, then add to sugar/shortening mixture, alternating with the milk. Add vanilla. Gently stir in chocolate chips and pecans. Pour into a greased and floured tube pan.
Bake at 350 degrees for 1 hour and 20 minutes.

Optional: You can frost the cake with chocolate frosting. But in my opinion, this cake is so good you don't need frosting!
